Where have the text attributes gone using download?

I've successfully obtained a file geodatabase of a chunk of OSM data using the ArcGIS Editor download tools.  The geometry is fine and I can control symbology from the attributes in the geodatabase: excellent.  However, I know there to be text attributes / annotation present - street names, for example, but I cannot locate these in the geodatabase.  How does the Download tool store these data in the geodatabase?

During the OSM data download process the OSM Editor creates attribute fields from specific tags - not all tags are converted to attribute fields and attributes.  To create additional attribute fields and attributes from other tags use the OSM Attribute Selector tool in the OpenStreetMap toolbox.  When you use the tool you'll be presented with all the tags available for the data you downloaded and you can then choose which ones to append as attribute fields.
